Barbecued Chicken Salad Sandwich Recipe

Are you wondering what to do with your leftover grilled barbecued chicken?  The taste of grilled chicken is so delicious so using it a second time around, in another dish, is a treat.  This time of year is a good time for some lighter entrees.  That’s why this recipe for chicken salad sandwiches is perfect.

I came up with a recipe that is loosely based off of a new favorite salad of mine from Panera Bread called the Strawberry Poppy Seed Salad.  It is filled with fruit, chicken, pecans and of course poppyseed dressing.  I figured I could somewhat recreate this in a sandwich form.

Here is what I did:

Mix Together:

  • about two cups cut up leftover grilled chicken (ours had barbecued sauce basted on)
  • one cup hulled strawberries, cut in quarters
  • one cup blueberries
  • two cups shredded cabbage (coleslaw mix)
  • 1/2 cup pecans
  • poppy seed dressing to coat

I mixed this all together and served it in whole grain pita bread.  The filling was delicious!  I would have preferred the sandwich in a bakery croissant though.  The pita bread was a little dry.  The only consolation was that it was more healthy.
